Garlic Scapes Cashew Dip

INGREDIENTS

VITAMIX OR FOOD PROCESSOR
FRESH GARLIC SCAPES (1-2)
3 CUPS OF CASHEWS
1/3 CUP OF OLIVE OIL OR AVOCADO OIL
3 TABLESPOONS OF LEMON JUICE (OR TO TASTE)
GROUND PEPPER AND SALT TO TASTE
GROUND GARLIC IF YOU WANT MORE
1/2 CUP OF CUCUMBER PEELED
1/2 CHIVES


METHOD

  • Soak cashews for 1-2 hours then rinse and discard water.

  • Cut garlic scapes at the bulbous white neck. Use the long garlic scapes under where you have cut.

  • Pour ingredients into blender and using tamper to combine. Stop to scrape down sides and remix to ensure complete smooth texture.

  • Put in fridge to get cold.

  • Serve with veggies, grain free crackers or use as part of a sauce.
