Double Chocolate Chip Cookies

These cookies are so simple, but so good!

Preheat oven to 375 regular/350 convection

Mix eggs, coconut sugar, molasses, butter, vanilla together first.

Then add the flour, powder, dark baking cocoa, baking powder to mix.

Do not over mix. Add chocolate chips and mix to combine.

*Add almonds slices, white chocolate or cranberries for a Christmas twist!!

*Baking notes— I usually make double the batch and when I do, I add one large egg to the mix.

INGREDIENTS



2 Cups of Almond flour

1/2 cup cocoa

1/4 cup of arrowroot powder

1/2 teaspoon of baking powder

1 tablespoon of vanilla

1 Large egg

1/2 cup coconut sugar

1/2 cup of ghee or butter or coconut oil

1 tablespoon of molasses

1/2 cup of chocolate chips

pinch of salt


METHOD


  • Preheat oven to 350 Regular oven or 325 convection

  • Take eggs out of the fridge so that they are room temperature by the time you use them

  • Remove butter or ghee out of fridge to soften

  • Mix wet ingredients first along with sugar of choice

  • Add dry ingredients until combined

  • Do not over mix

  • Add chocolate chips and any other additives such as almond slices, white chocolate, cranberries, mini marshmallows, candy canes etc.
