INGREDIENTS

1 CUP OF ALMOND FLOUR
1/4 CUP OF COCONUT FLOUR
1 TABLESPOON OF BAKING POWDER
1/4 CUP OF ERYTHRITOL OR SWEETENER OF CHOICE (COCONUT SUGAR, MONK FRUIT)
1 TABLESPOON OF CINNAMON
1/4 CUP OF COCONUT OIL (OR GHEE, AVOCADO OIL OR BUTTER)
1 CUP OF ALMOND MILK (ANY NUT MILK WILL DO)
2 TEASPOONS OF LION'S MANE EXTRACT
2 LARGE EGGS
1 TEASPOON OF VANILLA EXTRACT


METHOD

Topping

Option 1

  • mix cinnamon, coconut flakes and sweetener in a bowl and sprinkled on top after 5 minutes in the oven.

Option 2

  • melt chocolate (1/2 a chocolate keto/paleo/vegan chocolate bar or raw cacao pieces) in a double boiler on low heat. If you do not have a double boiler, you can use two pots (put water in bottom pot -1/4 way up). Once chocolate is melted, turn burner off and Dip donuts in chocolate and place chocolate side up on plate or rack.

Preheat oven at 325 degrees convection heat or 350 degrees regular heat

Bake for 23-25 min.

*If you do not have a donut pan..use a muffin pan..rip up a piece of parchment paper and roll into a small ball. dip in coconut oil and stick to the bottom then scoop mixture around it. Make sure you grease your muffin pan ahead of time with coconut oil or butter.
